Sour Cream Caramel Banana Bread
It’s
not your average banana bread by any means. It is rich and addicting. After you taste it, you will be checking on the fat
grams again, just to be sure you read it correctly. Yes, just over one-quarter of a gram of fat per serving!
1 3/4 cups flour
1 teaspoon baking soda
1
teaspoon baking powder
1/4 cup fat free Margarine
1 cup sugar
1/2 fat
free Sour Cream
2 medium very ripe bananas
1/4 cup fat free Caramel Topping
1/2 cup
fat free egg substitute
1 cup chopped dried dates
Preheat oven to 325 degrees. Spray two 3 x 6 inch or one 4 x 8 inch loaf pans with non-stick
cooking spray, set aside.
Mix together first three dry ingredients and set aside. In the bowl of an electric mixer cream together
margarine and sugar. Add next two ingredients and beat until bananas are mashed and incorporated. Add next two ingredients,
mix until blended. Stir in dates.
Pour batter into pan(s).
Bake for 35 to 40 minutes. Test for doneness with toothpick. Serve warm from the oven or cool on wire racks.
Yields 12 slices.
